This hummus is so easy to make I can hardly call this a recipe. But I will because technically it is. I came up with the idea for this hummus when I was left with a little extra pumpkin puree after making this pumpkin chocolate chip skillet cake. You can make it in 5 minutes and it's a perfect blend of sweet and savory. I highly recommend spreading it on a sandwich with apples. Yum!
Easy Pumpkin Hummus: Makes approx. 2 cups
1 can chickpeas
1/2 cup pumpkin puree (or more/less depending on how pumpkiny you want it to taste)
2 tsp tahini
1 tbsp apple cider vinegar
1/2 tsp rosemary
1/4 tsp ginger
1/4 tsp turmeric
1/2 tsp pumpkin pie spice
Combine all ingredients in a food processor and process until smooth. Scoop into container and top with additional pumpkin pie spice if desired. Enjoy!
